I just got a 1980 pickup regular cab and was wondering what bodies would I be able to swap? And how much work is it to do the swap?

any first gen will swap on directly,78?-83.. and then any second gen will work also. but you will need to re-attach body mounts everywhere on the frame. if u swap a matching body its pretty simple.

what if i wanted to put an extra cab would it be to long?

anything can be done. you'll just have to cut off the body mounts and move them. or just make new ones.

Cab would be longer and you would then need to section out the front part of the bed to shorten it to keep it on the frame if you intend to keep the bed. Below is an '85 pickup that had an extra cab installed in place of a std. cab and the front of the bed was shortened (as was the back):
