What fuel should I use in a 1998 Montero 3.5 SOHC?
Premium or regular? I don't have the owner's manual.

"Regular" per the Manual and TBS

The new question should be : I have a motor that supposed to run on regular, but it pings. What should I do?

It says "unleaded fuel only". I guess that means regular, However my FJ Cruiser says the same thing on filler door but the manual says premium. I don't have a manual for the Montero.

I am sure Premium is recommended, but the engine has the ability to run regular just fine. My 01 Outback says premium but I ran 87 since I bought it and not a single ping knock or problem.

Check the timing. An engine made for running on regular, if run on premium, to get any advantage of the higher octane needs to run at slightly different time. But when you pour regular into it, it pings. If it pings with regular but not on premium, retard the timing. That is only true if the engine is made to run on regular.
