So I made a major score at parts at a parts yard. I went ahead and took the rear spring packs out of the junk yard monty too. I'd like to add in a leaf or two as my springs are tired.

Should I add in a long spring, short or one of each? Is their a source for center bolts for the spring packs? Something universal?

Save yourself some time and find some Gen II Mighty Max rear springs, say 87 to 90 model. They have the military wrap and a little more arch, plus one more leaf already.

Is the mighty max a truck?

These springs were practically free, and I have way more time than money.

Any body know if it's better to add in long leaves or short?

I added all but the main leaf and the over loads and I do NOT recommend doing that. since I was having my parts rig towed, I left the main leafs on the donor vehicle (mistake 1). If you are going to do this, take the main leaf and cut the eyes off. If you don't and do what I did, the other added leaves will create a pressure point on the main leaf and it will slowly eat away at the main leaf. That's why I have OME's now smile
If I were to do it again, I would remove the over loads, add the cut main leaf and see how I like it. I did that with my Jeep back in the day and it worked well. not sure how much lift you will get from just the main leafs. On my "wrong" setup, I ended up with 1.5-2in lift.
