Head Machining Tolerances?

Did some flatness checking on the head. Looks to be .003 out in the area of the HG leak. The HG (Felpro) did not fail and was an MLS type. .003 seems inconsequential but it's the only thing that explains the coolant leak into middle cylinder.
Does anyone know how much I can shave off this head? Not sure if it will produce other problems if only one head is done?? Fit for intake manifold? Anyone done this before?
Shop machines the head, does not sand.

Thanks for reply.
Took it to the machine shop today, machinist says it's usually not a problem up to .010, then he said there are HG shims that fit under HG to raise head. I think I'll be alright. Will see how much he shaved head by.

Thanks for heads up. Shop planned .007 to get it flat. Low spot was around #4 cylinder - the problem.
Machine shop said .007 will not affect valve/piston top clearance or head bolt length enough to matter. I have new head bolts coming as I don't feel comfortable torquing these again. Will measure new against old as well as measure block holes with depth gage.
