Mechanix gloves I've found work well for man handling blocks, heads, etc. But I've yet to find a pair that I can have a delicate enough sense of touch for fine work and wont hold oil like a soggy rag.

There are several options out there for cut-resistant gloves - nitrile isnt one of them - but I do like these for some more of the delicate work. Biggest con is your hands will sweat like crazy.

The specialty cut resistant glvoes can be had at sites like Grainger, Lab Safety, even Amazon and most other industrial MRO & lab supply outfits.

As with most things, it's all down to personal preference.
