Make sure your coolant is topped off; I'd start with a t'stat; it's a little more readily available to you than the sensor.

Just dug a bit in the FSM; your water temp sensor is on the rt side of the head; closest to the fuel pump closeout plate (where a fuel pump would be mounted for a carbie).

The chart is a graph, so it looks like at about a coolant temp of 68F that your resistance should be around 2K ohms.

You can check that quick with a meter before going after other parts, at least.
