Getting the Wheeling Fever
Are there any open holes from which I can run power wires or other wires into the cabin? Also, how do I remove the lower portion of the driver's side dash? I can get all the bolts out, but the release for the fuel door and hood are getting in the way. How do I remove or disconnect those two so I can get it out?

There are screws that hold those latches in the dash. They're underneath the latch (pull and hold it, you'll see) and screw in straight up (or upside down, if you will).

As for wiring, look for where other wires go through and stick a coat hanger (or similar) through the gooey stuff and thread your wire(s) through that hole. Or, make a new hole with a drill and silicone around the wire after it's in place.

I'm sure others will have better ideas, though.

I ran a hose for my boost guage through the firewall, right below the brake booster. Not much point in giving you specifics, since my steering wheel is on the right, but just use something that goes through already as a point of reference, so you don't go through anything important with your drill bit. Don't forget to put a rubber grommet around the hole too, so the wire doesn't end up shorting on the sheetmetal.

But if only wires, I'd go with JB and use an existing, via coathanger. The main loom goes through there, and there's always room for a few more...

Body Damage is Cool
Not so certain about Gen II's (since all I have are Gen I's), but it's a pretty safe bet there's going to be a hole in the firewall somewhere close to the ECU under the dash.

87 Montero, bought new, by me -
88/89 intercooled Starion Turbo engine-

I counted 4 holes from the engine bay to the cabin (not counting the ones I cut open). 1 on each inner fender, 1 on the drivers side, and 1 on the passenger side right behind the blower motor. the rubber grommets are just massive O with a cut in them to get around the wiring. I would say go passenger side would be best, furthest away from any spinning steering shafts etc.
