It's been done, and has been proven repeatedly that the aftermarket thermostats have shoddy quality and thoroughly unreliable operation. A little Google searching will certainly get you more than enough reading material about thermostat failures. I've personally had two separate brand new A/M t-stats that I've tested that were off by more than 10 degrees from their stated operating temperature.
