Need a Spot
I'm leaning towards a truck with an access cab. I do not need a four-door truck.

It's me and my girlfriend our camping and rock-hounding gear.

Sometimes the drives are two other states and weather changes so we may need to crash in the vehicle.

On the truck brands what year and engines do you recommend?

Chevrolet
Doge
Ford
Nissan
Toyota

2. Dodge 1500
3. Ford F-150

Actually, the Dodge and Ford are a toss-up. Had a Dodge and put about 187,000 miles on it. I've got 92,000 on an F-150

The Toyota will have a shorter wheelbase and shorter turning radius.

If Toyota Tacoma, the 6 cycl is good. If Tundra, heavier vehicle, V-8

The Dodge and Ford engines are proven durability.

I am not a fan of Chevy or Nissan.

Of the brand you list, I concur with John, and would opt for a Toyota. A Gen I Tacoma would make a nice rig, especially an outfitted TRD.
