I've always run oil temp and water temp through the same gauge, using two separate sensors and a DPDT switch (I also run LED indicators to identify one from the other, hence the DP). This works pretty well.

I haven't seen any of the temp/pressure combo gauges, but it does seem like it would be a good idea.
