Blackened Halibut
Take 1 lb halibut cut into roughly 1"x2-2.5" pieces
Coat with Chef Paul's Blackened Redfish Magic
Cut 1 thin piece of butter per piece of fish
Preheat cast iron skillet on high gas heat for 10 min
Add 1 tbsp oil to skillet
Place 3-4 pieces halibut in pan; top with butter
Cover and cook 2-3 minutes
Flip pieces of fish
Cover and cook 2 more minutes

Barbeque Salmon
Place 1 filet of salmon in ziploc with 1 bottle Italian dressing, 1/4-1/2 c light brown sugar, garlic powder and pepper
Marinade as long as it takes the grill to heat up
Make a basket of foil, place filet in basket, pour in enough marinade to half cover filet
Wrap tightly, grill ~15 minutes

Flame-On Duck
Wrap duck breasts in strips of bacon
Place on hot grill 2-3 minutes per side

Burgundy Pinwheels
Marinate half pound tenderized flank steak "pinwheels" in:
1 cup cheap burgundy wine
1/2 cup maple syrup
2 Tbsp ground pepper
2 Tbsp thyme
Grill 7-10 minutes per side depending on thickness
