OK. Pulled that portion of the dash out. The temp control knob has a cord connected and seem to be working fine. Unless it has come loose at the other end wherever that might be. I do not want to pull the whole flippin dash out.

Can you follow the mechanical cable from the heat control knob to the other end? My FSM shows it going to what looks like a bell crank with a rod attached at one radius and the end of the control cable at another radius. Problem is, the drawing isn't clear where the bell crank is located. I know it doesn't help much but it's the best I can offer.

I hope you get it fixed soon. The forecast in Birmingham is the high teens Tuesday morning. Yes, folks, it can get cold in the Sunny South. Brrrr.

yeah forgot to mention that lol even with the a/c on your windows will still fog up though. Just switch back to free air after warmup is your best bet.

The compressor won't work when the outside temperature is colder than about 38-40 degrees because the pressure of the refrigerant is too low (below ~28 PSI) to close the low suction pressure switch. To keep the windows from fogging you will need to go to outside air.

The engine overheats but the car heater underheats. Hmmm ...

If the coolant level is up where it should be, I would suspect a bad water pump (worn/broken impeller) or an air bubble in the cooling system somewhere. Either way, coolant flow isn't what it should be.
