I will share my one simple goulash recipe, its just called "Trail Goulash". Its no true "Hungarian Goulash" just a hearty recipe thats easy to make and fills you up. Its kept simple as possible and is easy to be made at home before hitting the trails. But I also listed some trail alternatives if chopping onions and garlic isn't doable while out wheeling.

Trail Goulash
(Feeds 4-6, double recipe for 8-12 )

Ingredients:
(2)Full Size Cans of Baked Beans (Original or Maple/Brown Sugar Suggested)
(1)Pack of 8 Hotdogs/Beef Franks
(1)Can of Kidney Beans
(1)Pound of Ground Beef
(1)Whole Onion (Trail alternative:Dried Diced Onions)
(1)Clove of Garlic (Trail alternative:Garlic powder)
(2)Cans of tomato sauce
(1)14-16oz Summer Sausage
(3)Bell Peppers (any color will do, I use yellow or Orange)
(1)Liberal dosage of your favorite Hot Sauce or BBQ Sauce (or skip)
(1)Box of White Rice (OPTIONAL)


This is a very flexible recipe, 2 popular options are additional veggies, or if your looking to go meatier cans of hotdog chili.

Cooking Instructions:
This is best done before the trip and bagged individually and then assembled at the campsite. But can also be prepared before combining.

(1)Dice/chop your onion, summer sausage, hotdogs, garlic clove, and bell peppers
(2)Grill onions and bell peppers till the onions are translucent/soft and peppers are tender.
(3)Grill hotdog chunks and ground beef till fully cooked/browned.
(4)Pour cans of baked beans and tomato sauce into pot fallowed by peppers,onions,garlic, hotdogs, sausages, etc
(5)Stir and mix ingredients until completely combined and put over fire. Simmer for 30 minutes-1hr pending on heat source.
(6)Season to your liking, also add any hot sauce/bbq sauce at this time

NOTE:If your going for a more Jambalaya FEEL, then rice can be added. If so fallow step 7, if not skip to 8.

(7)Take your box of instant rice, add to hot/boiling water, drain, and add into the simmering pot.

(8)You can tell its done when the whole contents has heated all the way through and is starting to simmer/bubble/boil just a little.

(9) Serve and Enjoy.



This recipe can be modified/fixed to your liking. If you notice its kept very simple and easy, if you want to go crazy you could make your own baked beans, own tomato sauce, etc to make it really your own. But its meant to be a simple toss together meal that sticks to your ribs, and puts you to sleep after a long day of wheeling. Well let me re-phrase that, its mostly kid and family friendly. Its not an exotic dish, doesn't have tons of veggies (I know I wasn't a big veggie fan as a kid), or full of odd ingredients that would be nasty to most kids etc. Its also very adaptable so if you wanted you could cook it without the peppers or onions. <img src="/forums/images/graemlins/kewl.gif" alt="" />

I've made something similar, but I use bread instead of Pita's. Just butter it up and put it in one of those square pie irons, set it in the fire for a couple minutes, and you're set!

From Eric D: Camping Fajitas - prepare stuff before you go!

1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 large onion (white, sweet, or yellow.. don't matter)
3 to 6 ounces white meat chicken breast, already cooked - for convenience, a couple of brands like Tyson, etc sell packages of pre-cooked, chopped white meat chicken that is usually in the sandwich meats section of grocery stores... or you can have the deli super-thick slice you some cooked, chopped and formed chicken - if you don't feel like cooking the chicken the old fashioned way or don't have time
one, 2-quart (or larger) ziploc bag and one 8-oz (or larger) ziploc bag
1 packet of fajita or taco seasoning
soft taco size flour tortillas
Serves 3 to 6 people depending on appetite.

Preparation: Before you leave, slice or dice the peppers and onion and stick them in the 2 quart ziploc bag (really it ends up just barely over 1 quart)
*Slice the chicken breast into "fajita size" strips and stick that into the other ziploc bag, and pour the seasoning packet in with the chicken.

To cook: dump both bags into big pan or wok, hold over fire, and stir frequently enough to keep stuff from burning.

I have never found it necessary to add water but if your veggies were very dry, you might want to have a little bit of water nearby to shake into the pan halfway through cooking if it starts to look dry. Be sparing with the water, though - it's easy to overdo it.

If the food isn't sizzling, you're not holding it close enough to the fire or the fire's not big enough. Stir/cook at least until all of the seasoning is mixed evenly with all of the vegetables - cook to desired tender/crispiness.

Portion the veggies and meat into the tortillas and enjoy. You can generally get more than a dozen good sized fajitas out of this.

Doug H's Fluffy Eggs with Cheese Sauce aka, the HeartStopper.

Fry up 5 slices of thick cut bacon. (The key is low low heat, and cast iron)

Then you make Cheese sauce (you make white sauce then mix in your favorite cheese). Basically you melt 4-5 tablespoons of butter in a sauce pan. Then mix in 3 tablespoons of flour, with some spices and 3 teaspoons of salt. This part is done over low low heat. Once it is blended well add 1 cup of whole milk, or light creme. Turn the heat up to medium. When the sauce thickens, add your cheese, and tada, the perfect sauce.

Separate 4 eggs, and whip the egg whites and the yokes separately. To get the whites nice and foamy you use 2 tbs of water... and a pinch of salt. Use a electric mixer, dont waste your time trying to do it yourself. Then you blend in the yokes and mix it together.

Remove the bacon, but keep the grease in the skillet. Heat grease until it sizzles when water is placed in it. Then pour the egg mixture into the skillet.

Cook as you would normal scrambled eggs. Remove and pour cheese sauce over eggs. Put bacon on the side.

Enjoy. These will be some of the fluffiest eggs you ever had. Call your doctor later in the day.
