OK, so my 95 taco with 116k is overheating...I swapped the thermostat last night, but it did not fix the problem.
The truck runs fine, but after about 5 miles on the road the thermostat goes way up, then back down...then bak up and down...and so on.
It never goes into the red, but it gets really close...
any ideas on what the problem might be?

my dad has an 85 with the 22re and it did the exact same thing you just described and there was a crack in the hg in the water jacket and the number 4 piston
oh yeah if it is an 85 it is not a tacoma it is just a pickup

if it really is an 85 and you have the 4 banger, it sounds like it might be temperature overshoot... see here to read all about it.

I had a 86 Toyota. I started running a little hotter. I went to a radiaror shop and had the radiator cleaned and it started running normal again.
