So, I can leave the manual hubs locked and shift out of 4wd and it won't hurt anything?

Yes. It just spins the front drive train. It is just like not unlocking the auto hubs. You can shift between 2wd and 4wd as needed because the front and rear driveshafts are spinning the same speed.
