Turn the Idle Adjustment screw and set the idle at 850 (With engine warmed up of course).

if that doesn't solve the problem look for check engine codes. My truck was doing this a week ago and it turned out my Mass Airflow Sensor was dead

If it stays idling long enough, open the hood and give the EGR valve a good tap and see if this cures the problem. If not, disconnect the EGR from the intake plenum, install a temp block off plate and then see how it idles. If idle returns to normal you need to either clean or replace the EGR valve.

Salvo, FWIW, I'm cleaning up some parts right now; the EGR plate on the back of the head was clogged; easily 50%.
What I'm saying here is that it might not just be the valve; could be both.
You'd want to round up a gasket for it to go back together; I don't know if a fabbed one out of gasket material will be suitable or not. Anyone know? Mine are backordered.

A sticking EGR valve will act like that. Fine one day, acts up the next, gradually will get worse. As Darin mentions, tapping on the EGR when the idle is rough is a good test, that can loosen the EGR valve to let it close. A gun cleaning kit is a good tool for cleaning the EGR if needed. Small wire brushes and gun cleaning solvent work well to remove the buildup inside.

My local dealer and auto part stores didn't have that gasket in stock either so I used high temp RTV. Worked great and no leaks.

Mine are backordered. Dont short cut this one, the holes are precise and the material has to handle extreme heat cycles...not to mention if you are lucky enough to have the later cast iron exchanger instead of the older aluminum. If you need a couple of them gaskets Margi, let me know....Ive got a couple around from various projects when the plate wasnt removed. No back order!! And best of all....USPS can handle these. ~Darin
