never tried a ceramic clutch but my pops runs ceramic brake pads on his truck and swears they stop better.

As far as the pressure rating, it is simply a measure of how much pressure the clutch can handle before it slips, more it better for high horsepower/low gears/big tires. You'll probally be fine with factory specs.
