There are write ups on how to do it. Technically it's illegal to mess with them at all (in terms of roll back). It's not easy to roll them back and I don't recommend it.

The *easiest* thing to do is to take the odometer roll (the thing with all the numbers on it) and swap this between the speedometers. It's easiest to do this by disassembling the speedometer itself. Pay attention to the speedo's are assembled as you'll want to get the trip meter.
