Most people undo the bolts on the door side, and leave the hinge attached to the body. The bolts on the door aren't hard to get to...they really only take a 12mm box end wrench, and if you have a racheting type even better.

I took an extra set of hinges and drilled out the center to 3/8" and am using a 3/8" bolt (about 4" long) with the threads cut off and a tapered end. This way I can swap the half doors and full doors. However, I have noticed the weight of the doors is beginning to sag, so I am on the look out for a good set of 3/8" pins with the holes(like mentioned above)
