Sue them for the amount of stolen goods or is there more?

I'm not sure what the law is there, but merchants can usually sue for something like 3 times the amount of stolen goods in a theft case, just as an example.

In your case, I would at least sue for the amount of lost goods, the damage to the vehicle, plus every single minute of lost time resolving the damage, etc, at something like $20-30/hour.

You have to be reasonable in a court and that's certainly reasonable. If the law allows you more, then go for it. You'll probably end up doing this in small claims court, though becuase the overall amount will be within that system and you probably don't want to have to deal with a lawyer.
