There are two temp sensors - one for the ECU and one for the temp gauge.
It's unusual for them to fail.

Here's the graph for an earlier truck - this is the ECU sensor, not the gauge sensor (which may be different) -

Notice the scale is in Kohms, not Ohms.
600 ohms = 150 degrees or so
80 ohms would be super hot.

Coolant res shouldn't gurgle.. That's bad.. Maybe as simple as a bad radiator cap if you're lucky. Are you losing water?
