My rig update: I FINALLY figured out why my rear axle is shifted to the left (enough that under mild suspension flex my driveshaft hits the gas tank!). The problem must have happened back in my holister carnage last year, where I snap'd my lateral bar, left shock, and various other parts. I must have also managed to bend the rear lateral bar mount (also known as pan-hard or track bar). Its such a clean bend that I didn't realize it this whole time. It was only till I had my Rodeo side by side w/ another Rodeo that I noticed the difference. The fix was simple and taken care of w/ a sledge hammer.

Now I just need to do the fuel pump/sending unit, trans pan seal, fan clutch, install new coils, crank t-bars, install new roof rack (and buy lights for the night run!), and set up my CB system.
