the best rim width for the street, to me, would be one which matched the tread width. That would keep your tread flat on the road, and would wear evenly. off the road, it's better to have a slightly narrower wheel to keep the bead seated at trail pressures. the trade-off is less even wear (will likely wear down the center faster than the edges).

For my trail rig, I'll be running a 13" wide tire (probably a 10 or 11" tread width) on a 7" wide wheel until I can afford some beadlocks.
