Keep the EFI if at all possible.
If converting to carb, you'll need to energize the fuel pump manually, step down the pressure.. Add a manifold, carb, and throttle cable.
You'll need to redo the ignition system for mechanical / vacuum advance.

It's much easier to get the EFI right, IMHO.
