Good eating IF you skin and debone them quickly and chill them down. We hunt with coolers in the truck and chill them quickly. If you run them, the lactic acid makes the meat taste like liver. If you overcook them, they adopt the taste and texture of shoeleather (no fat to cover cooking sins).

Sear them medium rare at MOST, over a HOT flame, with olive oil, worcestershire, garlic, and steak seasoning, and you have a rare treat. (I vacuum pack them in worcestershire and olive oil to seal the meat.) Or, sear a roast, then put it in a crock pot with beef broth, onions, garlic, pepper, your favorite pot roast seasonings, and you can cut it with a fork.
