Need a Spot

Recently, installed the 32/36 carb conversion kit on 87 Monty, Seems to be running fine, slight hesitation when opening up to full throttle, but NEED Explanation for when I turn the vehicle off, it wants to keep sputtering. Any suggestions to stop this or what to do to fix problem.
