Yeah, a Hilux, Pajero, Jackaroo or Bighorn will be plentiful and very easy to upgrade in your part of the world. Not to mention that with some very minor upgrades, 33" tires can be fit. 33s with lockers (that are widely available in Aussieland) will make your rig highly capable and will probably get you into more trouble than you want to be in until you learn to drive offroad. One of those trucks would be my recommendation...
