I dont think there is much in the fsm about the locks. It definitely does not talk about repinning them but there is a good drawing of this kind of lock in the "MIT guide" labeled as a disk tumbler lock.

As for replacing them:

The doors are easy, take the door panel off and you will see them in the handle.

The fuel door lock is obvious. One spring clip.

You have to take the bottom of the dash off to get the ignition lock. Find a little recessed button on the bottom of the lock housing. Push on this button while you put the key in and turn it, the button will move up and the lock will come out.

It takes about 1 hour or so to install the set of 4 locks.
