Getting the Wheeling Fever

I am an avid hunter and take my SUV off road a good bit. I've always used Mitsubishi Montero's and have had very good luck with them. Problem is....They've made cars out of them so I've been eyeballing the Tundra. My question is, if I get a crew cab 4X4 and want to tow a couple of quads once or twice a year, which engine.
Now I know they have both 4.7 & 5.7 V-8's. What can I expect in Mileage? Mostly when I'm not towing. Can someone give me some insight?
