this is a heat exchanger, it doesn't store water, water just runs through it and gets heated as it passes through. I would say the whole assembly (coolant plus fresh water) is about 1 liter or so.

I do not think you want to regulate that. Let the heat flow.
I was thinking you might be setting up something like a marine water heater that has a preheat loop from the engine. This way you would not need to run the engine to temperature before drawing a shower from it.

If you want to control the temp at the outlet I would use an antiscald valve as used in house plumbing to blend hot and cold to give a set max temp.

the way these heat exchangers are setup is that the output of heated water from the HE goes direct to the shower head, doesn't get mixed at a 'facet' like in a house, so I will need to control the amount of coolant flow to the HE in order to prevent the water from getting too hot.

so I am thinking a parrallel setup with a valve inline to the HE, will that be ok?

Take a look at the blend valves from Sparco or Honeywell. They are also listed as anti scald valves. You can dial the temp to what you want, say set it for 106? and that is what your shower will be. That way if your supply tank is 55? or 100? it will mix that water with what is heated by the HE to give you a constant temp at the shower head. There are a few different set ranges so select one that will give the output you desire.

These get plumbed in after the HE with cold going in one side and hot in the other and the mixed output to the shower.

do you have any links to any of those blend valves you speak of? does mcmaster carr supply them?
