31. I went with a used set of 30 to try out, but I think when it's time to get new shoes i'll go up to 31". These trucks don't have any power anyway, and they already get pretty crappy mileage, so I don't think the extra inch will be all that much worse.

Another tire size to toss in is 265/75-15. They are 30.5 inch diameter. Haven't found any muds for this size but did find some AT's and snow tires.
If you want taller and a little narrower than 30x9.50's these could be used for onroad.

If you need 1" more clearance and bling factor: 31"
If you need more power and fuel saving factor: 30"

I voted for 30" cause I thought you had enough clearance as is. And probrably needed the fuel saving to get to the trails, and added power to tear up the TX desert...
