Maybe they've never rebuilt one.

As long as they're only going to do the machine work, I wouldn't care what they thought of this information, because the builder is the one responsible for making sure clamping range is adequate.

But - if that machine shop is going to assemble the engine, then I'd run - not walk - to a different shop where the machinists/mechanics were willing to listen and do as they're asked...... not as they believe. If they take the time to measure, they might learn something about the 3.0L blocks.
